How to Make Qer9 Moqla 3la il fa7am!

Yesterday Afternoon my mother had some fresh coals burning on the portable dowwa to make some chai fa7am… So a thought had struck me… why don’t i try to make Qer9 Moqla?! 

Of course all i needed was a moqla (pan)… some butter… and the qer9 moqla mix! So i got the ingredients out to make the mix…

What i used was 2 eggs, 2 espresso cups of sugar, 2 espresso cups of self raising flour (or add a table spoon of baking powder to regular flour), a tea spoon of ground cardamom, a little bit of saffron swimming in a little bit of heated rose water… First i cracked the eggs into a bowl

Then i added the sugar…

Then i began whisking away until i got a smooth batter…

Then i added the saffron in rose water & the cardamom

Then i began adding the flour gradually and whisking after each little bit added…

When i was done whisking i took the batch out to the dowwa…

I brought over a moqla and put it on the coals

i added a knob of butter and waited for it to melt…

and i poured some of the batter in and waited for it to bubble and cook nicely… it smelled good, like a yummy ger9 3qaily

I was so excited as the mixture began to bubble and thicken… i couldn’t wait to flip it over and devour it with my already poured estekana of chai fa7am…

and the result was…. *drum rolls*

Yes. I am serious. I don’t know what went wrong but it just wouldn’t flip over! I remember my mothers aunt cooking qor9 moqla as easily as pouring tea from the tea pot… it was supposed to be easy, it turned out into a nightmare… the mix wouldn’t brown and if it did it got burned and there is no way on earth to flip it !!!

and in the end my mom got out some clorex and started wiping everything while talking about selmonilla infection. Now i know why mom never made qer9 moqla before.

If you stop laughing at my lack of culinary skills… can you please give me another recipe for qor9 moqla? Please?!!

  2. Maybe if you put vegetable oil or olive oil in the beginning instead of butter I think that will reduce the sticky-ness haha;p Try that next time!

      I tried a 2nd batch with olive oil on very low heat ma nefa3 e7tarqaw o la9egaw ham… el mix is what’s wrong!

    من عيوني بس قوليلي تبينه رقيق نفس الكريب ولا امتن مثل البان كيك ؟؟

    هالوصفه اعتقد لازم يكون رقيق يعني بالفنيال صبيه ولفي المقله لما يغطي داير ميدور المقله وتشيلينها بالإيد وتطلع رقيقه

    وقوليلي إذا تبينها بالتمر أو بالهيل وإن شاء الله أجرب الجم وصفه اللي عندي وأعطيج أحسنها 🙂
    جم دنذرمه غاليه عندنا 🙂

  7. I think we have its brother in Bahrain (ger9 6abay) which is moqla! The recipe i have says: 2 eggs, 1 cup milk, 1 cup flour, 1 teaspoon baking powder, saffron. then you heat ishway buter and oil and mithil ma galat il ikhet, u have to it9beena ibfinjan . 3ad i7na we mix suger and cardamom powder into a plate an flip the cooked ger9 into it.
    I have a dates version if you are interested (from a book 6ab3an not thati’m making them up!)
    bs walla good effort didnt expect the end result to be like this 🙂

          hmmm ymkin laish thick… 3la ma testewee yabelha modda… maybe if i had been more patient with mine they would have turned out OK!


  10. I did it with All-Purpose Flour, I did not add baking powder, and when it bubbles flip it once with a big spatula, just as you make the pancakes. room temperature eggs is essential. try to cut the sugar because it turned out to be too sweet.

      i tried it with both kinds of flours ma nefa3… i took a bite of the burned creation and i agree it was too sugary… and i got my eggs from the fridge 3la 6ool… hmmm
      how much sugar/flour did u use?! O why didn’t you post about it khal il nass testefeed?!

    It’s the same idea of the pan cake ,so it shouldn’t stick mmmmm……try pitting little oil in the mix and does your pan have thick base ?

    هاردلج يا دندرمه كل تعلومه طبخ بتحروق وتفتفت

    الصراحه انتي عملتيلي هوس بمعرفة المزيد عن هذي الاكله الكويتيه المنقرضة وحصلت معلومات لابأس فيها

    ترى عقب ما قريت عن شغلج طرت المطبخ وعملت قرص مقلة بس للامانه حطيت طحين اسمر
    وزدت بيكننغ باودر وبيكنغ سودا ومعلقتين سمن للخلطه
    والبيض بحرارة الغرفة
    وخليت العجينه ترتاح ربع ساعة
    وطلعت الصراحه وايد طيبه ومرتبه لا وصورت شغلي
    والكل طلع من داره يتشمشم الريحه الخنينه والكل ستانس من الطعم والشكل

    بعدين انا شفت فنجانك كبير على المقادير

    والمقدار بالمقله كثير فتطلع سميكه وتاخذ وقت وتحترق من تحت ومن فوق رطبه
    نار الدوه يمكن حامية عليها
    يبيلها نار وايد هاديه وصبر
    والله يوفقج في المرة القادمه

    سمعت ناس بدل السكر تمرد تمر بالماي

    بس ماسمعت احد يقول حط حليب بالعجينه
    في المره الثانيه بجرب بالتمر

    لا يفوتكم هالسوق المنسي
    فيه شغلات وايد حلوه
    بس عسا ماشالوه

    صاجه الواحد ما يطلع منهم إلا بشغلة حلوه جديده على الاقل
    كل مره يبدعون ترى من افكار الناس الي تجيهم وتطلب شغلات مخصوصه وتنتشر عقبين
