Though it is low in fat and very healthy with tons of vegetables and a side of green salad… it is a lot of carbohydrates and it has a little guilty secret: Slivers of Luzerner RahmKase Cheese tucked inside the random tubes of pasta… and when you take a bite, u might find a little gooey surprise inside… Diet Starts Sunday… masakht.ha!

By the way… the whole thing took about 30 minutes to make only. Something that yummy cannot possibly be diet friendly… wella shetgoloon?

The Recipe

**************************************************************************************************************************

Ingredients:

  • 200g Rigatoni Pasta (Penne would do fine)
  • 1 Medium Zuchini (Koosa) cut into wedges
  • 1/2 Yellow Pepper cut into 1 cm squares
  • 1/2 Red Pepper cut into 1 cm squares
  • 1 clove of garlic, crushed
  • 1/2 Medium Eggplant (Bedyana) cut into 1cm cubes
  • 1 Tin of chopped tomatoes
  • 2 table spoons of Fat Free Yoghurt, or Double Cream, or Sour Cream
  • Olive oil, Salt and Pepper, Oregano, Dried Basil, and Balsamic Vinegar

Method:

  1. Boil some water and Salt in the Pan and cook the pasta while you prepare the Sauce.
  2. In another pan on a medium heat, heat ishwayat olive oil, like one table spoon, and add the garlic with some oregano and salt, then add the eggplant cubes and the zuccini cubes. Stir around o add the herbs and some salt and pepper. You can cover it until ishwaya il egg plant becomes tender… about 5-7 minutes… then add the peppers and turn around until you see it’s heated o cooked. If your pan seems dry add ishwayat water… no need for oil.
  3. Now add the tinned tomatoes and stir around… season to taste ishwaya.
  4. Now add about 1-2 tea spoons Balsamic Vinegar. If you don’t like it or dont have it it’s ok! and no, you cannot use another type of vinegar. It would just end up tasting weird?
  5. Now add the 2 tablespoons of yoghurt/sourcream/double cream… it’s just to make it a little more creamy and clingy to the rigatoni… use yoghurt if you want urs light (i recommend yeo valley organic fat free greek yoghurt)
  6. Mix the sauce and pasta (which you should have drained by now) and put in your serving plate.
  7. You can add chili olive oil on top -i don’t my hubby does- or fresh shredded basil leaves, or in my case i added slivers of Luzerner Rahmkase cheese which is creamy and from Switzerland. Im sure you can find a similar creamy cheese in D&D or TSC… it’s like hmmm like mild cheddar… push the slivers inside the wedges… Cubes of Mozzarella would also be good
