How to Make Yummy Speedy Diet Friendly Veggi Noodles…

I am no cook. But i like noodles alot and frankly, there are no good chinese takeouts in Q8…  & no, peacok and takeaway do not really mix!

Besides i am still on a diet remember?!

So for today, i made my beloved speedy veggie noodles. I usually arrive home from work at around 4 and i always look for fast recipes and shortcuts to make my favourite dishes…

This dish takes less than 20 minutes from start to finish. It is light and healthy and is so simple a 10 year old can make it for lunch…

First the ingredients…

1 packet of Indumi veggi noodles, use indumi because it is the best with two sachets filled with flavour. if ur on a diet use one packet for 2 persons. If u don't care use 1 packet per person.

Some Sesame Oil, Two sachets one oil and one dry bambo thing from the indumi packet, some chinese 5 spice that u can do without, and some soy sauce

Some thinly sliced veggies: red, green, yellow peppers, baby carrots, courgettes, celery

I usually add some baby corn and do not include celery, but since im on a diet i added the celery to burn calories and the corn had to go…

in ur wok, or any other pan, add the little sachet of oil from the indume with one tea spoon of sesame oil, and let them heat a bit

When the oil is heated, add the carrots...

Next add the celery and give it a good stir... if the oil is not enough add some water to the wok

Now add the courgettes (koosa)... and give it a good stir...

While the vegetables cook, bring a little pan and add to it some boiling water from the kettle... about 300 ml of water, and let it boil

Now add the rest of three colors of peppers... and give a good stir, add a little water if the wok is too hot

Keep an eye on the veggies in the wok & stir, and now ur pan should have the water boiling

Set the timer for two minutes, and return to stirring the veggies in ur wok

The noodles should be boiling away for now...

I felt like adding some frozen beans while the noodles are cooking, u can add frozen peas or brocolli or cauliflower if u want...

Now is the time to add some drops of soya sauce, becaureful because it is very very very VERY salty!!!

And ur Done!!! U don't need a side salad because u have all those veggies...

  13. Oh, is That what the sachet of oil is for? i dont use it cuz i thought we had to pour the oil over the noodles when they’re ready 😛

    i love bell peppers- all colours.

    I’ve just notice that u called koosa (zuchinis) ”courgette”!!
    Are you from a french speaking arab country (maghreb, lebanon).
    I tried ur recipe, i just add ognions chawarma meat and thai hot chili sauce… just wonderfull
