Meet 2day’s Diet Lunch… The Giant Mushroom!

Instead of going to Nino’s and having their Giant Mushroom dripping with oil and cheese… i decided i would make it on my own today…

All it took is one Giant mushroom, some rocket, some cheese, herbs, and ten minutes exactly!!!! With minimal fat and maximum flavour! 

I opened the grill in my oven. While it heated i washed the Mushroom and the Rocket….

I rubbed the mushrom with one drop of oil only, using the olive oil bottle nozzle thing. Some salt, freshly ground peppers, dry herbs for baking, and voila!!! I put it under the grill for 3 minutes on each side. When the top side was up, i sprinkled some mozzarella cheese on top to melt…

While it was grilling, i put the rocket, some cherry tomatoes… then put on top the mushroom. Afterwards, a squirt of sundried tomatoe paste here and there, a dash of balsamic on the whole thing and some freshly shaved parmesan on top were the final touches!!!

 and Voila!!!

Ten minutes, low fat nutrious meal!!! I would have it every day of the week if i could!!! YUM!

    well this is not soo far as i always do it when ( mazaj mawjod) mmmm it need some thing next to it like a smoked bread griled or a pice of bufulow motzerila it will be around it like mmm

    ooo final coment i feal i want to test it agaain and again when i remember the test of the sundried tometos on its top YAAAAAAMI

    But steal my mummy – alah yar7amha- (bashamal) is the best dish i had since i was born 🙂

  12. WOW – two of my favorite things – sun-dried tomatoes and balsamic vinegar, plus some grated parmesan? WOW. I’m going to have to try that one. It looks fabulous.

    I am so proud of you, it isn’t hard to stick to a diet and you have made such progress.

    Do you have an olive oil spray-er? I get those little tiny pitas at TSC and give them just a little spray, sprinkle with a little salt and zaatar, bake at 200 C for about 15 minutes – until crisp – just the side dish Bo Tootie is looking for, has taste and low fat.
