Grilled Veggie Pasta Recipe in Pictures…

I got off work early yesterday, went to the co-op to buy the ingredients as i like my food fresh, then went home and made it. and as i promised, i will post how i made it with pictures…

You see, in order to get the best out of this recipe, you need three important things:

1) Quality ingredients means quality and tasteful salad. You cannot get the same taste if you use cheap ingredients i.e. Canned mushrooms mathalan…

2) If you make the veggies one day in advance and keep them alone, then mix them with the pasta on the day of the 3azeema, it tastes much better as the veggie would have time to marinade in it’s own juices for maximum flavour…

3) You must make this and you must be happy making it. The thing they call “nafas” bel 6bkh is nothign but the love and tender care you put into this. Mathalan, if u are willing to make it for ur best friends gathering, imagine their smiling pictures, their humming while they devour every mouthful… if ur making it for ur mean 7amoola mathalan, it will not turn out with the same tase…

Now for the steps, u need the following:

  • 1 Box of Makaroona Qawqa3a like the picture below
  • 6 Big Capsicums (felfel imlawan) in Red, Yellow, and Orange. DO NOT USE THE GREEN ONE… it tastes weird
  • Box of fresh mushrooms
  • 3 Big Courgettes (koosa)
  • A box of cherry tomatoes… you dont really need it but it gives a good taste
  • Some quality Parmesan cheese
  • Some Pine nuts
  • Some Oregano and Olive Oil. My olive oil is a palastenian one i bought from arth il ma3areth… ayanin…
  • 1/2 Jar pesto
  • 1/2 Jar Sundried tomatoes
  • Salt and Pepper to Taste

Now with the steps…

First, boil the water and put about 350g of pasta in a pot… here is the pasta i used. This is the best brand ever. If i must make pasta, i only use this kind…

While the water boild. Heat up the oven, wash and assemble your veggies and ingredients


IngredientsYou see, i used the Pesto and Sundried tomatoes fro M&S... and the oregano comes all the way from Tesco UK... if you can find some quality oregano in TSC it will do. Just smell it and see how good it is. Now, cut all your veggies into bite sized cubes, like thoseBite Sized Veggies

Then, take the veggies, put them on an aluminum foil sheet (qasdeer) inside the oven, sprinkle a little olive oil, salt and pepper, and oregano on top of them, and bake them for a few minutes. The wafting smell of the veggies should be a good indicator that they are done.  I used aluminum foil because i didnt want to use a baking tray then wash it. I do not have a maid and i hate washing the dishes. Fa when ur done with the veggies just throw the foil away and your over will still be spotless… 😀

While its baking, bring out your “Mixing Bowl”, which is where you will mix all your ingredients. The pasta

now is done and ready… drain it and keep it on the side.

I had to make two patches of veggies to grill… so while i was grilling i washed the cutting board, the pasta pot, and wiped the surfaces clean 😀

By the time i was done, i took all the veggies and put them while hot in the mixing bowl. Threw away the foil and closed the oven. Then mixed the veggies witht he chopped sundried tomatoes, fresh tomatoes, and pesto. Salt & Pepper to taste as well.

If you are making the pasta one day in advance, this mixture is what you keep covered in the fridge until the next day. I didnt have that kind of luxury, so i put the pasta into it 3la 6ool o mixed…

Why did my pasta look like this? Becasue i do not use oil when boiling the pasta. You can use oil of course, or you can run it in its drainer (meshkhal) under cold water for a little while, the put it and mix it with the veggies. In my case i just mixed it carefully… o im done…

I kept it in the fridge, then cleaned whats left in the kitchen, took a loooong hot bath, got ready for the 3azeema, after 3-4 hours, i took it out of the fridge, put some flaked Parmesan on it. not shredded like mozzarella pizza cheese, laaa flaked big light flakes like the ones on cesar salads and voila…

    guess u never appreciate it til u know what’s behind it !
    ya36eech el 3afya dear… u’ve gone through alot of work for our bbq… while all what we did is EAT… shame on us…
    I’m glad i’ll never be examined on this ..

    Honey this is just assembling whats already there. It doesnt get any easier, chop, mix, grill, mix, voila!!!

    My happiness lies in the moment i see every one’s face lighting up while assembling it. In ur case, the moment you saw it you were so excited… and i know you dont have a good relation ship with food!!! so it must mean it was so special then that it made you want to eat it 😀
